Xylitol is a sweetener derived from plants. It looks and tastes similar to the regular sugar, but contains 40% less calories. Additionally, it has a very low glycemic index GI = 8, so it doesn't raise the level of sugar and insulin in blood.
Xylitol is a natural ingredient of many fruits and vegetables. You can find it in e.g. yellow plums, strawberries, raspberries, cauliflower, lettuce and spinach. Therefore, it has always been in human diet. Xylitol is produced from hard birch and beech wood.
How to use: Use in the same way as white sugar. Should be introduced into the diet gradually (starting with ½ teaspoon per day). Its maximum recommended daily intake is 10 teaspoons. Excessive consumption may have a laxative effect.
